
In my house, June is a festivity-filled month that is basically renamed my husband’s month, as we get to celebrate our wedding anniversary, followed by his birthday and then Father’s Day! We can’t celebrate his awesomeness enough, so this past weekend I decided to try a cleaner, yet indulgent special treat for his birthday/Father’s Day, involving everyone’s favorite, ice cream.
As the temperatures continue to rise, the constant demand for ice cream increases and sometimes you just have to take it up a notch for special occasions (or any summer BBQ or weekday treat)…. and this time it was chocolate chip ice cream cookie sandwiches.
Knowing there wasn’t enough time to make chocolate chip cookies, I picked up a better option at Whole Foods for our semi-homemade hack – Immaculate tear-a-part chocolate chip cookies, whose organic ingredients are pretty comparable to making them from scratch and a lot better than most store bought cookies. I also bought a pint of organic vanilla ice cream, so we could indulge yet feel good about our cleaner ingredients.
After our cookies cooled, vanilla ice cream and chocolate chips were added and our festive treats were complete. Although it would have been even better to give our ice cream sandwiches time to firm up in the freezer, the troops couldn’t wait to celebrate, so we all dove right in and loved every bite.
Now, we can’t wait to make these again and again this summer (whether we have a celebration or not) and try other cookie/ice cream combinations….. homemade or not!
