Monster muffins are a fun and delicious breakfast or snack

Whether you’re looking for a fun Halloween (or St. Patrick’s Day) breakfast/snack or just an excuse to hid spinach in something you/your family will eat, these monster muffins – aka spinach and banana muffins – won’t disappoint.

When I came across this recipe many Halloweens ago, they were an instant hit in my house. The green color was a pro, not a con to my non-spinach eating, picky daughter, so monster muffins quickly became part of our usual baking rotation.

Since then, we’ve made these healthy muffins so many times, slightly altering this recipe, by reducing the amount of maple syrup to compensate for the addition of chocolate chips (right?!). Pro tip: we usually double the recipe it to ensure we have leftovers to last us a few days (they definitely don’t last long).

Always a crowd favorite, monster muffins are super clean, easy to make (yes to blender muffins!) and a super satisfying, fun treat this time of the year and always.
