
Don’t get me wrong. I love baking but boxed mixes exist for a reason, right?! Who doesn’t love the convenience and I’m so glad for brands like Simple Mills, which makes better baking easier than ever.
Simple Mills mixes are my go-to when making cupcakes or cakes, as they have such clean ingredients, taste delicious and are more widely available. They’re the perfect option to have on-hand for any special occasion or whenever you’re in the mood.
Rather than using store bought icings (although there are definitely better options, including those from Simple Mills), I prefer instead to make my own and this Martha Stewart recipe never disappoints. I don’t like messing with an OG recipe, as this frosting is awesome, and not only do I know what’s in it, but I can control how much sugar I use. I prefer to use less confectioners sugar than that’s called for (I usually use about 1/2 – 1 cup less), as it’s already super sweet.
Indulgent? Yes!
But that’s what special treats are all about, right?
And I’m all about progress not perfection and enjoying the little things in life, so using a better boxed mix is the perfect solution for this semi-homemade celebration.
