
Are you like me when it comes to meal planning? Some weeks you excel, while others, you barely get through by the skin of your teeth.
Last week, I was motivated again and decided to make my friend Rhianne’s harvest egg bake – it was delicious, super simple to make (all you need are eggs and Trader Joe’s holiday veggie hash!!) and the perfect, hearty breakfast or lunch! It’s such a flavorful mix of protein and veggies and I especially loved pairing it with avocado, a side salad or cottage cheese.
While the egg bake required a little prep time, I was thanking myself, as was my husband, all week long when we could reap the benefits and enjoy this healthier meal that was in the fridge waiting for us!
Harvest Egg Bake Recipe from @believeinyourhealth:
Ingredients:
- Trader Joe’s holiday veggie hash
- 10 large eggs
- 1 T of extra virgin olive oil or avocado oil
- Salt and pepper
Directions:
- Preheat oven to 350 degrees.
- Heat 1 T of EVOO or avocado oil in a large skillet over medium-high heat.
- Once it’s sizzling, toss in your holiday hash, add a pinch of salt and pepper, and saute for about eight minutes until it’s nice and soft.
- While the hash is cooking, crack 10 eggs into a medium bowl and whisk.
- Coat a 9×13 casserole dish with some EVOO and spread your sauteed holiday hash evenly across the bottom.
- Pour the egg mixture over the hash and sprinkle some salt and pepper.
- Bake for around 30 minutes, or until the eggs are no longer runny.
