
If you too are looking for quick, protein-filled snacks or want to take your salads up a notch, you have to try these delicious, roasted chickpeas. Almost ten years ago, I stumbled across this fool-proof “recipe” reading SELF magazine and it’s been in constant rotation ever since.
These chickpeas are such a great, protein boost after school/before endless activities and will definitely be crowd favorites – as evidenced by what’s remaining in the photo above after my kids enjoyed these 🙂 Bonus: they couldn’t be easier to make and you probably already have everything you need in your pantry!
Roasted Chickpeas
Ingredients:
- 1 can of chickpeas, rinsed and drained
- 1 T olive oil
- 1 t salt
- 1 t ground cumin
Instructions:
- Preheat oven to 350° and line a baking sheet with unbleached parchment paper.
- Add all ingredients to a bowl and toss well.
- Pour chickpeas onto a baking sheet and bake until crunchy, around 45 minutes. Be sure to check on them frequently and enjoy!
