
Since January 1st, I’ve been taking part in Emily Ley’s Simplicity Challenge to help start the year off right and it’s been a lot of fun trying to de-clutter and get/stay organized.
Each day, a simple task is given and I especially loved day 24, which was writing down 10 quick, go-to meals to help with meal planning. When I saw this, I thought wow, that won’t be hard – but it was actually more difficult than I imagined to think of 10 meals that my entire family approves of and happily eats.
This challenge got me thinking – do you meal plan regularly?
If so, do you want to try to tackle this task too?
Was this easy or super hard for you to do?
Also, what meals made the cut?
Here are mine 10 and I have a goal to up this to 15 meals by the end of the year:
- Turkey meatloaf
- Turkey meatballs
- Chicken cutlets
- Instant Pot salsa chicken
- Chicken quesadillas
- Breakfast for dinner (usually eggs, hash browns and avocado)
- Burgers/veggie burgers
- Roast chicken
- Tacos
- Baked ziti
