
Looking for an easy, make-ahead recipe that’s nutrient-dense, delicious and great for breakfast, lunch or as a snack? Then meet your new favorite go-to, cottage cheese egg bites!
I first came across this recipe after one of my IG favorites, @livingwithlandyn, posted about them in her stories and knew that I had to make them – these are super simple to whip up and customize what you have in your fridge/freezer, or add the ingredients to your next shopping trip and I promise you don’t be disappointed!
These egg bites were the perfect lunch on-the-go this weekend and next time, I will definitely double the recipe to freeze some, too!
Cottage Cheese Egg Bites – adapted from @livingwithlandyn
Ingredients
- 1 cup of cottage cheese
- 8 eggs
- Raw chopped veggies of choice – chopped spinach, peppers, mushrooms, etc!
- Cooked protein of choice – I used 4 links of Applegate organic chicken breakfast sausage, chopped
- 1 cup of shredded cheddar cheese
- Salt and pepper to taste
Directions
- Preheat oven to 325 degrees and line a 12-cup muffin pan.
- Beat eggs in a large bowl and add cottage cheese, shredded cheese and salt and pepper. Mix until well incorporated (or you could quickly blend everything for about 10 seconds).
- Pour the egg mixture into the muffin cups, filling about three-quarters of the way.
- Add veggie and protein mix-ins.
- Bake for 25-30 minutes, or until the egg bites have set, and enjoy!
Note: I like to place the muffin pans on a baking sheet while baking just in case 🙂
