
As we near closer to the end of August, my motivation to do much of anything is low and cooking is at the top of that list – anyone else feeling this way too?! Hope so š
However, when this super simple, clean and delicious mac and cheese recipe from Nick’s Kitchen (do you love his YouTube videos, too?!) caught my eye, I knew it was something I could definitely make for a weeknight dinner – and I’m so glad I motivated myself to make it (ha!), as it was so good and a hit in my house! It will definitely be a go-to recipe whenever we need some comfort food in the future.

Ingredients
- Box of elbow macaroni
- 2 tablespoons butter
- 1 tablespoon flour
- 1 cup whole milk
- 1/2 cup heavy cream
- 2 cups sharp cheddar cheese
- 1/2 cup Gruyere cheese
- Spices to taste: smoked paprika, mustard powder, salt and fresh cracked pepper
- Optional: Parmesan cheese to top
Directions
- Bring a large pot of water to a boil, salt and cook the elbow macaroni until al dente. Strain and set aside.
- In a separate large pan over medium heat, melt butter and flour and whisk until it turns golden brown. Add whole milk and heavy cream and whisk until thickens and begins to bubble.
- Turn off the heat and add the cheddar and Gruyere cheeses. Once your cheese sauce is nice and smooth, season with smoked paprika, mustard powder, salt and fresh cracked pepper. Add in the cooked pasta and stir well.
- Finish by adding the pasta to an oven-safe dish and lightly grate some Parmesan cheese on top. Broil on high until crispy and bubbly – enjoy!
